Noodle Veggie Stir Fry

Yakisoba is a classic Japanese noodle dish paired with a salty, sweet and sour sauce. This dish is made in one-pot, this recipe is so easy to make

for any weeknight or weekend dinner. Yakisoba noodles stir fry have become quite the staple in our home, we make it once a week, Wednesday nights are usually our noodle nights.


What is Yakisoba?

Yakisoba noodles look similar to ramen noodles, but they are slightly different. They are made of wheat and best when stir-fried. You can find them at any Asian Supermarket at a very low price - and while you're there pick up the rest of your ingredients for this stir fry.


Here's what you need:


Cabbage - green cabbage is the best in this recipe.

Carrots - you can add different color carrots

Green Bell Peppers - you can also use red or yellow bell peppers.

Broccoli - add great fiber to the dish

Green Onions - if you don’t have any on hand, you can skip it.

Bean Sprouts - an excellent source of antioxidants, but if you don't have them, you can skip it

Yakisoba Noodles – sold in most Asian grocery stores fridge section

Large Wok - great to use if you have one, if not use a large skillet


Yakisoba Sauce Ingredients


Sugar – sugar will give you the best flavors in this dish.

Soy Sauce – low sodium soy sauce will make the best option

Stir Fry Sauce - check ingredients to make sure it's vegan (I used Kikkoman brand)


How to Make it:

  • 1 large green bell pepper

  • 1 large carrot

  • 1/2 bunch of green onions

  • 1/2 small cabbage head

  • 1/2 large yellow onion

  • 2 diced garlic

  • 1 cup fresh broccoli floret

  • 1/2 cup bean sprouts

  • oil ( I used unrefined coconut oil - but you can use a unflavored oil of your choice)

  • 16 oz yakisoba noodles

  • 2 tsp sugar

  • 2 tbsp soy sauce

  • 1/2 cup of stir -fry sauce (if more is needed you can add more sauce)




- Combine the sauce ingredients together. Set it aside.

- Prepare all veggies, cut them into the size of your preference.

- Some noodles may need to be preheated in their original packaging. Follow the instructions on the noodle bag.

- Cook all vegetables in a pan on medium heat, just for a few minutes.

- Cove and steam for 2 mins.

- Add noodles & toss everything together to break up the noodles

- Add your sauce and give everything a good mix

- Cover and cook for 1 to 2 mins

Tips for the Best Yakisoba

  • Prepare all your ingredients ahead of time for easier stir-frying. 

  • Use a wok pan to prepare your noodles if you have one. If you don’t, use a large skillet. 

  • Try adding vegan chick'n or (beef - less) season seitan to this dish
